Ingredients
2 1/2 cups cauliflower , cut into medium sized florets
1 cup capsicum , cut into big cubes
a pinch of turmeric powder (haldi)
1 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
1/2 tbsp ginger-garlic (adrak-lehsun) paste
1 tsp chopped green chillies
1/2 tsp punjabi garam masala
1/2 tsp chilli powder
1 tbsp roasted and crushed dried fenugreek leaves (kasuri methi)
1/2 cup tomatoes , cut into large chunks
4 tbsp oil
salt to taste
For The Garnish
2 tbsp chopped coriander (dhania)
Method
Add the turmeric and salt to a vesselful of water and mix well.
Soak the cauliflower in it for about 10 minutes. Drain and keep aside.
Heat 2 tablespoons of oil in a pan and fry the cauliflower in it till it is golden brown.
Add the capsicum and sauté for a few more minutes.
Heat the remaining oil in a kadhai and add the cumin seeds to it.
When they crackle, add the onions and sauté till they turn translucent.
Add the ginger-garlic paste, green chillies, salt, punjabi garam masala, chilli powder and dried fenugreek leaves and sauté for about a minute.
Mix well and add the tomatoes. Sauté for a few minutes and add the cauliflower and capsicum and cook for a while till the vegetables are coated with the masala.
Serve hot garnished with coriander.
