Cheese Pattice Mexican Baked Rice
by , Published: June 11, 2012Do you Love Cheese? Do you Love Mexican Sauce? Here we combined and served you a devilish Mexican Cheese Pattice Baked Rice.
This dish has everything you want. Cheese, Tomatoes, Rice, Potatoes, Paneer everything combined together for those Dancing Tweezzy Tongues.
When this dish came out of my Oven and I was clicking Pics, my daughter was ready with the fork and spoon. She was so much excited with the texture of this dish that she could not wait for my last shot.

Ingredients:
For the rice
2 1/4 cups Steamed Rice (ऊबला चावल)
1 onion, chopped (प्याज)
1 1/2 tsp chilli powder (लाल मीर्च पाव्डर)
1 cup boiled mixed vegetables (ऊबले हुइ मीक्स तर्कारी)
3 tbsp oil (तेल)
salt to taste (नमक)
red food color (optional)
To be ground into a paste (for the rice)
4 cloves garlic (लेहसून)
12 mm. piece ginger (अदरक)
For the cheese patties
2 potatoes, boiled and mashed (आलू)
100 gms crumbled paneer (पनीर)
For the tomato gravy
3 large tomatoes (टमाटर)
1 onion (प्याज)
3 cloves of garlic (लेहसून)
a pinch of carom seeds (ajwain) or 1/2 teaspoon dried oregano (अजवैन / ओरेगानो)
1/2 tsp chilli powder (लाल मीर्च पावडर)
1/2 tsp sugar (चीनी)
1 tbsp oil (तेल)
salt to taste (नमक)
For the baking
3 tbsp grated processed cheese (प्रोसेजड चीज)
mozzarella cheese as per taste (मोत्जारेला / पीजा चीज)
Method :
For the rice
1. Heat the oil and fry the onion for 2 minutes.
2. Add the paste and fry again for 1 minute.
3. Add the chilli powder, Food Colour (Optional, We didn't use food colour for this recipe) and vegetables and fry for 2 minutes.
4. Add the rice and salt and mix thoroughly.
For the cheese patties
1. Mix the potatoes, paneer, coriander, flour, green chillies and salt and shape like patties.
2. Cook on a tawa with the help of a little oil.
For the tomato gravy
1. Heat the oil and fry the onion for 2 minutes.
2. Add the garlic and fry again for a few seconds.
3. Add the tomatoes, ajwain, chilli powder, sugar and salt and cook until soft.
4. Blend in a mixer. Do not strain. If the gravy is too thick, add a little water.
How to proceed
1. Spread the hot rice in a greased baking dish.
2. Put the cheese patties over the rice.
3. Cover with the tomato gravy and sprinkle grated cheese on top.
4. Bake at 200 degree C (400 degree F) for 10 to 15 minutes.
5. Serve hot.
Tips :
If you keep the rice and sauce hot, the baking time gets reduced.
