Bhopali Mixed Vegetable

As the name suggests, this mixed vegetable dish is from the kitchens of bhopal. Credit goes to one of my friend from Bhopali. As per him, most of the foods from this region have vegetables (of your choice) and they are cooked in a creamy, spicy and rich gravy!

Ingredients
To Be Ground Into A Paste
8 to 10 garlic (lehsun) cloves
5 green chillies
6 tbsp finely chopped coriander (dhania)
4 cloves (laung / lavang)
3 cardamoms
1 tbsp coriander (dhania) seeds
2 tsp cumin seeds (jeera)
25 mm (1”) piece ginger (adrak)
4 tbsp water

Other Ingredients
2 cups mixed vegetables (carrots , potatoes , cauliflower and green peas)
salt to taste
3 tbsp oil
2 tbsp finely chopped cashewnuts (kaju)
5 tbsp milk
2 tbsp fresh cream
2 pinches sugar

Method
1.Combine the mixed vegetables, salt and 2 tbsp of water in a microwave-safe bowl, mix well and microwave on high for 6 minutes or till the vegetables are done. Keep aside.
2.Combine the oil and cashewnuts in a microwave-safe bowl and microwave on high for 1 minute. Remove the cashewnuts and keep aside.
3.In the same oil, add the prepared paste and microwave on high for 2 minutes, stirring once in between after 1 minute.
4.Add the cooked mixed vegetables and cashewnuts, mix well and microwave on high for 1 minute.
5.Add the milk, cream, sugar and salt, mix well and microwave on high for 3 minutes.
6.Serve immediately.
