This recipe of Minty Fried Potatoes Rawa Dosa is one of my favourite Tiffin / Lunch Box recipe. When we travel in a train we usually carry Potato recipe. But this time on my wife's travelling list I have added this Minty Fried Potatoes curry which she can eat with Theplas or Chapatis.

It was a Sunday evening and me and my wife just came from vegetables market. Lots of Potatoes and Mint Leaves where tentalizing my taste buds. So thought of this quick and unique combination of Rawa Dosas and Minty Fried Potatoes. To make it a one dish I gave this dish a name Minty Fried Potato Rawa Dosa.

Ingredients:
For Minty Fried Potatoes:
3-4 medium sized potatoes (आलु)
1/2 cup chopped mint leaves (पुदीना)
1 tsp cumin seeds (जीरा)
1/2 tsp red chillie powder (लाल मीर्च)
a pinch of asafoetida (हींग)
1 tsp dry mango powder (आमचुर पावडर)
1 tsp chaat masala (चाट मसाला)
salt , as per taste (नमक)
oil (तेल)

For Rawa Dosa:
1 cup semolina (रवा)
1 cup all purpose flour (मैदा)
1/2 cup rice flour (चावल का आटा)
1 medium size finely chopped onion (प्याज)
1/2 cup chopped fresh coriander (धनीया पत्ता)
salt , as per taste (नमक)
oil (तेल)

Method :
For Minty Fried Potatoes:
1. Cut potatoes with skin in Diamond shape or 1 inch pieces and deep fry it in hot oil.
2. In a pan put around 1 tbsp oil and add Cumin seeds, when it crackles add asafoetida and Red chilli powder.
3. Now add mint leaves and saute for 1-2 secs. (Dot fry mint leaves too much else its color and taste will disappear)
4. Add fried potatoes, salt, Chaat masala and Dry Mango powder (Amchur powder).
5. Keep it aside.

For Rawa Dosas:
1. Mix all ingredients and add water until batter becomes semi-thick in consistency. Mix it well.
2. On a hot pan add dosa batter and make simple dosas.
3. Top it up with Minty Fried Potatoes and serve it hot with Chutney or Sambhar.
